What sets a hot cupboard apart from a bain marie

Both pieces of equipment exist to hold food above the temperature where bacteria multiply, typically above 63 degrees C, but they do it differently. A hot cupboard is an enclosed, insulated cabinet, usually heated electrically with a thermostatically controlled element, used to keep already-plated meals or trays warm for a short holding period, often under the pass counter. A bain marie is an open, shallow water bath: food containers (gastronorm pans) sit directly in or over near-boiling water, which is far gentler on sauces, gravies and anything that would dry out or skin over in dry cabinet heat. Many galleys run both, a bain marie on the service line for the actual serving period, and a hot cupboard behind it holding the next sitting's plates or overflow trays.

Main components

Cabinet or bath body

Stainless steel construction throughout, insulated on hot cupboards to reduce galley heat load; the bain marie well is a simple stainless tank with a drain valve for emptying and cleaning.

Heating element
