Commercial dishwashers on board run the same rack-and-spray principle as ashore but add a stainless build against salt air, a fresh-water final rinse independent of any recirculated tank, and a duty cycle sized for a fixed crew sitting rather than a variable restaurant flow.

What sets a marine dishwasher apart

A galley dishwasher at sea does the same job as a commercial unit ashore, a wash cycle followed by a hot final rinse to sanitise crockery and cutlery, but it is built and operated differently. It has to survive continuous vibration and rolling motion without door seals working loose, its drain and supply connections are fixed piping rather than a floor gully, and it usually runs a known number of cycles per meal sitting for a fixed crew count rather than a variable commercial covers count. Many units are single-tank hood or rack types rather than the flight or conveyor machines found in shore catering, because galley space and crew numbers rarely justify anything larger.

Main components

Wash tank and pump

A recirculating pump draws detergent solution from the tank and sprays it through upper and lower rotating arms. Tank heating is usually electric, sometimes with a steam coil on vessels that already run a steam plant for the galley.

Final rinse system

A separate booster heater raises rinse water to 82-88 degrees C for the final sanitising rinse, drawn fresh each cycle rather than recirculated, which is what actually controls bacteria rather than the wash cycle itself.

Door and seal arrangement

Hood-type machines lift by hand or motor; door-type machines seal with a gasket that is the single most common wear item on board due to constant thermal cycling and vibration loosening hinges over time.

Detergent and rinse-aid dosing

Peristaltic dosing pumps meter detergent and rinse aid per cycle; calibration drifts over months and is rarely checked unless wash results visibly deteriorate.

Selection and sizing

  • Cycles per hour needed against crew size and meal sitting length; a 90-second to 2-minute cycle machine copes with most crew complements under 40.
  • Fresh water and electrical supply available, since the booster heater alone can draw several kilowatts.
  • Rack size against the vessel's crockery and galley tray standard.
  • Corrosion-resistant grade of stainless steel for the tank and frame, given the humid, salty galley atmosphere.

What to look for in a supplier

  • A booster heater with a descaling routine suited to the feed water quality expected on board, since RO permeate and shore water differ in hardness.

Descale the booster heater on a fixed calendar rather than waiting for the rinse temperature alarm; by the time the alarm trips, scale has usually already cut heater life and the sanitising rinse has been under-temperature for weeks.
